PERFECT AMERICAN PANCAKES

If you holiday in Florida you will be sure to have had American pancakes for breakfast. They are really easy to make and are a special breakfast for family and friends.

INGREDIENTS

Scant five ounces of milk

Two teaspoons of caster sugar.

Pinch of salt.

One teaspoon of baking powder.

Scant five ounces of plain flour

one egg

METHOD

Mix dry ingrediens together and add in the milk and beaten egg.

Meanwhile heat a frying pan to medium hot with an equal quantity of butter and vegetable oil. Just enough to thinly coat the bottom. Slimmers could use their spray.

Pout batter in a table spoon at a time. Once bubbles have formed across the surface that is the time to flip them over. Continue til cooked through an lightly golden.

Now is the time to serve buttered with maple syrup.

A word about maple syrup; buy the real thing and not maple flavoured syrup which is horrid. Also the lite versions of maple syrup are pretty nasty too.

Variations

Mix bluberries into the batter; these will pop rather satisfyingly as you cook them. Sprinkle with golden syrup.

Add to the batter either currants or raisins; pre soak the dried fruit in orange juice for extra tang.

Fry or grill some streaky bacon til crisp and serve over pancakes with maple syrup.

Cook some bramley apples with brown sugar and butter and serve over the pancakes with good vanilla ice cream.

Top the pancakes with chopped bananas and whipped cream.

Make some dark chocolate sauce and use to coat the pancakes. Top with fromage frais.

Mix bananas, brown sugar, whisky and butter and heat gently. Use the mixture to make a special topping.

Top with ham and grated cheese.

Add to a full English breakfast.

Mix orange juice and zest with butter, brandy and butter and heat through. Pour over a small stack of your pancakes.

Smother them with a white mushroom sauce.

VARIATIONS

Substitute plain flour with self raising flour for extra fluffy pancakes.

Use half brown flour for a healthy alternative.

Use buttermilk instead of whole milk (adds a whole new tang)

Top with caviare and sour cream.

OTHER THOUGHTS

When mixing the batter do not try to beat the lumps out; it is meant to look like that.

Do not try to cook in advance; the pancakes will end up flabby. Gather the family and serve them as you go onto warmed plates.

I have up to 4 pans going at a time if there is a crowd. Bit like the Generation Game, but get someone to flip with you.
