I follow CarolAnn's school of thought, in that I tend not to use cash hardly at all and just put everything onto a credit card. There isn't a handling fee for normal purchases, only when you use a credit card to withdraw cash. The exchange rates on the cards tend to be competitive with most banks and bureau de change; they have to be, otherwise nobody would spend anything internationally.
If you worry about spending too much on your flexible friend keep the receipt for each purchase in your wallet; when your wallet gets too full it means you've spent enough! Kind of reverse psychology.
If you go the card route, I'd also recommend having more than one card; and leaving one back at the villa or hotel. That way if you do lose one card you haven't lost everything - it's only a phone call to the UK to block the card too and you don't have the hassle of obtaining replacement travellers cheques.
You do need some cash though for ice-creams and the occasional hotdog. Remember also to get a bunch of small dollar bills for tips too.

we go down the credit card line also. whether its a hotdog with jalapenos and extra onions for breakfast at 7/11 or $150 at the butchers shop. take 2 credit cards and 2 debit cards and a few hundred quid in dollars.
i dont know what the statistics are (john boy may be able to tell uscheers john). but leave one set in the villa / case/motel and take the other one with. no one gets mugged/ burgled twice in one holiday

We've always found the credit cards to have a better exchange rate that the travel agents.
Never been mugged or robbed, but I suppose there will always be someone who has had a bad experience.
Travellers cheques can be used as cash and therefore don't need to be changed.
most shops take them as if they are cash!!
AND give you the correct change
Get a safety Deposit Box for the Hotel or villa if available, better to be safe than sorry!

We always use the credit card as it is easier than having to change travellers cheques, and I think you get a slightly better rate. I normally take cash for snacks and tipping etc.

You dont have to change travellers cheques, they are used exactly as cash and are widely accepted in the same way and you get change in dollars.

Probably worth emphasising that they need to be Dollar traveller cheques (as opposed to sterling).[^] As Lesley said the're accepted as cash without any problem.
