I am going to Orlando in September, so got my ESTA all sorted a month or so ago.
Turns out I now have an unplanned trip to California in May. Do I need to update my ESTA to reflect this trip or does it not matter?

If your esta is active then you do not need to update it.

As long as your passport covers both trips you don't need to do anything. If it expires between the trips you'll then need a new ESTA.
I understand that but when I completed my ESTA I had to state where I was staying (which was Orlando September 2018 at the time of completing the ESTA) so they won't question me about why I am going to California when I arrive next week?
I can only say that we don't update ours between trips and have never had a problem. However if you are worried, as long as you have the reference number, it is easy and free to log in and make a change.
It will be fine, my daughter recently completed her ESTA application listing a Florida address, then her boyfriend whisked her away to New York for a birthday treat and nothing was raised.
