If you go over to the space coast, you can often see dolphins playing in the sea. We have seen them near Merritt island. There are encounters off Key West but that would be too far. Perhaps someone knows of something nearer
There are a number of Rivers where you can watch the mannattees which is also fascinating.
If you go to Blue Springs state park you will see the mannattee and they too can be seen near Merritt Island. They are best seen when the sea is cold becasue then they come up the rivers to the warm springs.

We were out at our villa in June and went down to Clearwater a couple of times to spend time on the beach. We were in the sea up to about shoulder height and dolphins were about 50 yards from us. They were there for ages and a number of "dolphin encounter" small boats were stopped close by so that people could spend time watching them.

We were at Sanibel Island in May and saw wild dolphins just off the beach, originally say the fin and thought 'SHARK' but on closer inspection it was a group of Dolphins just splashing and playing in the surf.... Fabulous. It was not an experience you can pay for or predict, I have paid for many wild dolphin or whale encounters (Hawaii and Australia) and nothing compared to letting nature just happen in front of you.

    Hope your lucky too.

We saw lots of dolphins when we went deep-sea fishing from Port Canaveral, actually way lot more than when we paid to see them on that very fast boat on the gulf (for the life of me I just can't remember the name of that boat...[msnembarrased]

Went to Clearwater a few years back, did the Sea Screamer (big, fast, yellow multi-occupant speedboat) and dolphins loved to swim and jump in the wake of the boat.

Every time we've been to the Gulf Coast we've seen dolphins in the sea. If you go to Clearwater (and I suspect several other places) and take boat trip, most guarantee you will see Dolphins. The like to come and play in the wake made by the boat.

We saw dolphins every day during our week at Anna Maria Island last summer.
