According to the source I read, you should start trying to book on the morning of the 180th day before you want to visit. Don't know if that's so but I do know that character dining is very popular.

We booked this at the 180 day point. It is expensive but worth the money, IMHO. Included in the price are 2 beautiful sets of photographs in a presentation folder. One side is whoever with cinderella (we have the 1 of the whole family and 1 just the children) and the other side is a photograph of the castle; 10 x 8. Also included is 2 6 x 4's of the same pictures. Great for those who need gluten free food.
