how do you keep it fresh?

It stays very cold in the hold during the flight. I tend to buy the extra extra strog cheddar and it is ok
Are some of the Canadian cheeses similar or am I getting mixed up with the bacon?[msnwink]

I don't know about Publix in the Orlando area but it has been nice to see Publix on the Gulf Coast are stocking more British cheeses - Stilton, Sage Derby, Double Goucester as well as a nice American Brie (President)plus some French baguettes.

Elaine[/quote]Slam it into your case out of your fridge last thing before leaving and slam it into your villa fridge as soon as you arrive. It's normally still cold from your own fridge in the UK by the time you arrive.

Go To Costco -they do an excellent mature Cheddar over there- Make is COASTAL- they have it here also if you want to try firstly. Other than that, ~I get finely shredded sharp cheddar and find that is olay for Cheese on Toast or whatever.
