Pleasure Island and the Ciywalk clubs etc will be out of the question then, unless you have one of the party looking after the 3 year old while the others go out, as the entrance to these clubs are 21 and over.
Celebration is much more family orientated, as are most of the parks both Disney and Universal to some degree although I would say more likely teenagers
We have been to Epcot three years running and have had a fab time, but as most places will be very busy, it will be a very long day. We have also been to the Epcot resort area of the Disney boardwalk resort and they have organised games and parties etc as well, As this is probably your first visit to Orlando at this time of year, going for the more organised events is probably a wiser move,
