Blue Springs is great-we saw over 70 manatees in the springs-but they are only there thru Dec to end of Jan-or there abouts.
Glad you are going to Mt Dora-one of our favourite places. We love it so much our daughter chose to get married there in 2002. Be sure to eat at The Garden Gate, have a beer in the Icelandic Pub/ a coffee in the bookshop/ buy a souvenir or teddy from Timeless Keepsakes/ visit the huge craft shop-great for gift ideas and if you want a bit of nostalgia from times gone by-do have a browse in The Secret Garden.
You can finsh off with a stroll by the lake or a trip on the steam train.

Try Everglade city, we drove down, found a hotel and went on Captain Doug's airboat ride in the Everglades, absolutely fantastic!!
The kids rated this above any theme park, we touched wild alligators, saw a wild Croc and the kids held a baby gator and a python and they put on a great show just for us. Then they gave us directions to a roadside creek where you can drive alongside the gators - they even crawl onto the road (don't get out for a picnic and don't pick up the snapping turtles on the road-they bite).
(Be prepared take plenty of mosquito repellent.)
There is also a local museum explaining how Everglade city came to be built (its a man made island in the centre of the everglades, population about 300)
By the way the hotel did gator steaks for dinner - interesting but I don't see them catching on!

Decisions, decisions....
I think a trip to Celebration is an especially good idea so that we can experience the town while it's still owned by Disney. I hope the new owners don't stop the Leaf and Snow Falls as I think that's a "must-do" after reading all your stories!
A breakfast at Animal Kingdom sounds fun, I'll have to investigate to see whether you get close-up viewing of the animals while munching on your cornflakes! Hubbie would love that! Swiftly followed by Brunch at the Renaisance, Cheesecake Factory for High Tea and Sushi at Amora's for dinner. Oh, how I wish I really had hollow legs!!
I'd love to see the Cirque de Soleil show. We had the pleasure of seeing the Vegas show in Treasure Island which was Superb!
It's a shame that we won't be in time to enjoy the Manatees in their natural habitat. That's something that going on the Christmas visit list though.

My parents celebrated their ruby wedding anniversary in orlando last year. They did a balloon ride with a champange breakfast followed by a helicopter ride over orlando. They both thoroughly enjoyed themselves.
