I don't know about the water parks, but all the rest have their own websites, which have there opening hours for the whole year. Just put the park your looking for into a google search.

Busch Gardens tends to be busier at the weekends as the locals go, we always find a mid/early week visit is best as it is for all parks.
For some reason we always find it to be busy at Seaworld on a Monday but this is only from our experience not official figures.
Don't know of a site where you can find this info but hope this is of some help.

Have a great time and remember sometimes the queue adds to the experience as they do try to entertain you whilst you wait.

We have always visited Busch Gardens on a Monday. We have walked onto most of the rides even during the summer months. Weekends are busy though. As for Universal/Sea World it really depends on the time of year. We went last May and November. May was very busy but in November the parks were empty even at weekends. When visited Wetn wild in november and there could have only been 200 people in the whole of the park.
We have tended to visit the parks first thing on a morning or late in the afternoon during the busy summer periods as the hours are extended.
