I don't think there is a simple answer to your question but, generally speaking, the cheaper fares are midweek (provided your stay includes a Saturday night) although the difference is usually only in the £10-£20 each range. It seems to me that these days airports are pretty busy every day of the week but I have found that Sundays are a bit quieter because there are fewer flights.
Obviously, main holiday periods such as the next couple of weeks have an impact on the numbers travelling.
We have guests until 12th April then off to China 22 May so thought we might try to fit in a visit to the villa in between.
Seen Virgin flights for less than £300 (we usually fly virgin) but am open to options.

Most of the major airlines' websites (Virgin included) allow you to search using 'flexible dates' so you can see when the cheapest fares are available.
I am trawling through it all as I reply. There are hundreds of them out there, but I will get there in the end. I have opted to go on the Monday so that's good news.

The BA website also allows you to see which are the cheaper days to fly, which is handy if you can be flexible with dates.
Some websites also give the option of being flexible with dates by a few days to get the cheaper seats.
Monday, Tuesday and Wednesday are noramlly quieter[msnwink]
When we flew out this year we were told that Mondays were generally the quietest day to travel.
