We have eaten in the Sci-Fi diner a couple of times. Not planned, just happened to be in MGM and hungry.

The food is usual park fare, burgers etc..
The theming is what makes it though.

On entering you walk down the outside corridor, which runs around the outside of the big circular dining area, and you get led through one of the openings to your table.
When I say table I mean a six seater car facing a big screen showing B-movie excerts (big lizards attacking teenagers and the like).
The rest of the room , although dark, is painted like an outdoor drive in.
You sit in pairs but in front of each other and have your meal whilst watching the screen. Not one for meal time conversation because of the layout but defintely a unique experience.

I thought the food was decent enough and I will eat there again in November as a midday top up.
I'd give it a thumbs up especially for kids.

I agree with Brizzle that The Sc-fi is unusual and good on the decor, but felt the food left something to be desired. I always felt that MGM was a bit 'gastronomically challenged' compared with Epcot and MK.

The Brown Derby is a must for us at least once every trip to Florida and in all the years have never been disappointed - only thing I do miss now is the pianist and impromptu sing-a-long which we used to get.

Don't know about the others you mentioned, sorry.
