Cheesy chips with bacon and salsa
Karen Hardcastle from Basildon sent us this fabulous recipe. “This is really good as a TV dinner" says Karen. "It can be Free on either Green or Original days if you count either the potatoes or bacon as a Healthy Extra, and use reduced fat cheddar as a Healthy Extra ‘a’ choice”.
Our serving suggestion is to enjoy it with a Friday night film!
Karen’s delicious recipe wins her a Curry Feast book. For your chance to win, send us your recipe!
Serves: 2
Syns per serving:
Free on Green and Original. Add 6 Syns if not using cheese as a Healthy Extra choice
14oz/396g new potatoes, skin on and sliced (or as many as you like on a Green day)
Fry Light
6oz/170g lean bacon, finely chopped (or unlimited on an Original day)
1˝ medium red onions, finely chopped
a few finely sliced mushrooms and peppers
1˝oz/85g reduced fat cheddar, grated
For the salsa
˝ medium red onion, chopped
a big handful of cherry tomatoes
1 tbsp balsamic vinegar
1 tbsp jalapeno peppers
small carton of passata
artificial sweetener to taste
1. Slice the potatoes so they are about ˝ cm thick and place in boiling water. Simmer for 8 minutes. Meanwhile, turn the oven on to 220°C/425°F/Gas mark 7 and pre-heat an oven dish sprayed with Fry Light.
2. For the salsa, chop half of one of the red onions into medium sized pieces and cook in a pan sprayed with Fry Light until soft. At the same time quarter the cherry tomatoes and put them in a bowl, pour the cooked onions on top and add the balsamic vinegar.
3. By now the potatoes should have had 8 minutes. Drain them, pat them dry with kitchen roll and put them in the oven dish. Spray the potatoes with Fry Light and add paprika or chilli powder if desired. Place the dish in the oven and cook for 30 to 40 minutes (turning them every 10 minutes or so).
4. To finish making the salsa, chop the jalapeno peppers and add to the mix. Now top up the dish with the passata, mix well and add sweetener to taste.
5. Finally, chop remaining onion, bacon, mushrooms and peppers very finely and fry them in the pan sprayed with Fry Light. When they are looking crispy, add them to the potatoes. Mix well and sprinkle with the cheese, return to the oven for 5 minutes to melt the cheese, then serve with the salsa.
Karen sometimes adds a little paprika or chilli powder for an extra kick. You could also enjoy some cooling very low fat natural fromage frais as a dip for Free!
it sounds like my sort of thing Julie but what is it called?
and it doesn't say but you would have to uses a healthy B for either the bacon or the potatoes depending on the day you choose
unless you use the new quorn bacon and then it would be syn free (plus healthy extra "A" cheese) on a green

Had another busy day trying to get everything done before Thrusday evening when we leave. Staying at a B&B the night before we fly we are going to do a check in the evening before as we think it will not be so busy. Will have four suitcases as we are taking a number of things out for the villa, including a safe.
Mix and match day for me
Large bowl of mixed fruit
Prawn salad and fruit
Muller light yoghurt
Quorn sausages, baked potato and sweet chilli baked beans and mixed fruit

Evening all, I'm back in the dunce's corner, put the 1˝lbs back on that I lost last week. Honestly like a yo-yo at the moment, ok back on track as from tomorrow and some proper planning going in - that is the problem I think.
Chin up Sally, your health is the most important thing you know[grouphug].
