Hi Andy and welcome!
We used to stay 2 weeks in a villa in Orlando and then have a week on the coast, sorry haven't done Port Richey so can't offer any advice for there.
We used to do the parks with a 2 days on, 1 day off regime, and found we could fit everything in to suit the age of the children that way. As we went in the summer the parks were open late so we used to return to the villa for a late lunch and swim and return recharged in the early evening. The day off would be spent at the villa or a water park and perhaps shopping for part of it.
We actually planned it all out on a piece of paper as it seemed the only way to actually ensure we visited the parks and rides the children wanted to go on. Also as you will no doubt be up early (everyone will wake up early for the first few days anyway) plus with children, you can get to the parks as they open, giving you a head start on the rides. Work backwards round the park rather than beginning at the beginning (if you follow me) as most people enter up Main Street and meander on from there, but get straight on the train to the other end and go that way.
Make sure you have plenty of drinks - water is the best thing, and sunscreen for everyone.
