    Hi

    well it's all go go go on here at the moment[msnwink]

    just a quick log on for me because i'm off to have a trial run in making some bread[msneek]
    the little darlings are going to be baking their own bread at tea time so i thought i would test it out first, i'm going to be making parmesan and sundried tomato rolls and the kiddies will be making regular white rolls

    poor hubbie will have to eat most of it[msnscared][msnsmile2]

    Sally sounds like you had a lovely mothers day[msnsmile]

    and Fiona SNAP!!! i have to write everything down too or else it doesn't get bought when it comes to the supermarket, i also have to write down appointments and sometimes silly reminders for things that i shouldn't need a reminder for, my husband gets quite frustrated providing the words that i know i need to say but aren't there when i need them, it's all because of the scarring the seizures caused on my brain, that and a little bit of old age 37!!!!,[msneek] but hey at least now if i blank my mil i have a really good excuse[msnwink]

    I did stick with the diet last week although I admit I was a little naughty yesterday, no chocolate but bacon butties with white bread and butter[:O] roast potatoes....more than two and apple pie and custard. I only eat wholemeal bread if I eat any at all but bacon is not the same unless on white warburtons[msnwink]

    Just had weetabix and fruit so far today and I am doing steak for tea with bolied potaoes and veg[msnsmile2]

    BTW - anyone got any recipes for fritatta - I am meant to cook one tomorrow for our tasting session, I would like one without pasta in it - just vegetables & eggs - anyone seen one??

    Spinach, onion and herb fritata (from the 100 Green recipes book from SW)

    1 1/2 syns per serving on green

    Fry light
    6 spring onions sliced
    9oz spinach leaves washed
    3tbs freshly chopped basil
    6 eggs beaten
    1oz of Parmesan cheese grated

    Spray pan with FL and cook Spring Onions for 2 mins add Spinach and fry for 2-3 minutes until it wilts
    Mix the basil with the eggs and pour into pan fry for 5-6 mins
    Sprinkle the top with with the cheese and place under the grill for 3-5 mins until the fritata has set
    Leave to stand for 5 mins before serving

    do you want one with potato in it?

    if so how about using thinly sliced sweet potato and various coloured peppers then add the basic quiche mixture and stick it in the oven for 25mins

    my bread is "resting"[msneek]

    off to knead and stretch in 5 mins

    well all that kneading stretching has paid off i have a beautiful looking parmesan and sun dried tomato loaf

    darling husband (who had the butter out waiting!!)says it tastes good too[msnsmile2]

    i will be cutting it into large slices and sending some over to mil, bit too tempting for me to have hanging around the house[msneek]

    my eldest has made a white loaf and this is as i type "proving" itself in front of the fire[msneek]

    it's a good job i'm off to get weighed soon or i may have succumed to a slice or two[msnwink]
