    Evening all!!!

    My children take after me and don't eat hardly any meat (its all chicken and fish in our house and occasionally minced steak like today in the wraps) and they don't eat sweets either, just chocolate at the weekends[msnsmile]

    Todays food diary.......

    Porridge
    Skinny latte
    Banana
    Salad Nicoise without the olives or potatoes same as Fiona[msnwink]
    Grapes
    Skinny latte
    Bolognese wraps which were delicious[msntongue] and the whole family ate them in a flash! Ingredients - Minced steak, toms, onions, peppers (red, green and yellow), garlic, mushrooms and creamed tomato passata - yummy[msnwink]

    Lots of water[angel]

    Got more fruits for later may have strawberries with natural low fat yogurt[msnwink]

    Being looking at all the recipies appearing on here - I'm going to try the Bolognese Wraps and the Mushroom Risotto as they both sound yummy!

    Well I had my tuna steak for dinner with baby sweetcorn, carrots and green beans...delicious. No room for my dessert (strawberries) so saving them for later.

    Here's one for tomorrow.......

    It’s Shrove Tuesday again – time to start practising your tossing technique and s c r a p ing those escapee pancakes from the ceiling! Whether you whip up your own pancakes or buy a ready-made mix, there’s always a Food Optimising friendly option.

    An average small pancake made with skimmed milk and cooked in vegetable oil is 8½ Syns; however, the Syns are reduced if cooked in Fry Light and the milk is taken as a Healthy Extra. A ready-made batter mix, such as Co-op 128g dried pancake & batter mix is 21 Syns, or pre-made pancakes such as Aunt Bessie's 8 pack of traditional pancakes are 4½ Syns each.

    Top toppings include:
    Maple syrup, per level tbsp 2 Syns
    Golden syrup, per 1 level tbsp 2 Syns
    Jam, reduced sugar, per 2 level tsp ½ Syn
    Chocolate spread, 1 level tbsp 4½ Syns

    Fabulously Free toppings include:
    Lemon juice
    Sliced bananas
    Muller Light vanilla yogurt
    Scattered blueberries
    Sliced strawberries

    Our yummy recipe below makes a tasty Shrove Tuesday treat (or perfect pud for other times of year!) and it’s only 5½ Syns for two delicious pancakes!

    Hot cherry pancakes

    Serves: 4
    Syns per serving:
    5½ Syns on Original and Green
    Preparation and cooking time: Approximately 40 minutes

    2oz/57g plain flour
    2 medium eggs
    5oz/142g + 4 tbsp very low fat fromage frais
    ¼ pt/142ml skimmed milk
    283g can black cherries in natural juice
    2 level tsp cornflour
    Fry Light
    1-2 tbsp granulated artificial sweetener
    Fresh cherries and ground nutmeg, to decorate

    1. Sift the flour into a bowl and make a well in the centre. Add the eggs and 5oz/142g fromage frais and whisk until smooth. Pour in the milk and whisk again to form a batter. Stand for 30 minutes.

    2. Meanwhile, drain the cherries, reserving the juice. Make the juice up to 7floz/198ml with water. In a small saucepan, blend a little of the juice with the cornflour, then pour in the remaining juice, bring to the boil, stirring, and simmer for 1 minute until thickened and clear. Stir in the cherries and set aside.

    3. Lightly spray a crêpe or small frying pan with a little Fry Light and heat over a medium heat until hot. Stir the batter and pour 3 tbsp into the pan, swirling it to cover the base. Cook for 1-2 minutes until set and lightly golden round the edge. Turn over and cook for a further 1-2 minutes until golden. Keep warm while making 7 more pancakes, stacking them between sheets of greaseproof paper.

    4. To serve, reheat the cherry sauce gently for 1-2 minutes until piping hot. Add sufficient sweetener to taste. Place 2 pancakes onto each serving plate, top with a little cherry sauce and fold over. Serve with fromage frais decorated with a few fresh cherries and a little ground nutmeg if desired.

    Just back fronm class and i have stayed the same[msnsad]

    at first i felt really cheated as i have food optomised 100% but i have been told not to worry and if i continue doing what i'm doing then should see a bigger loss next week

    i have arranged a few early evening walks with another class member to help boost each others weight loss, the walk works out about 2 1/2 miles mainly uphill and we are all fixed up with which nights etc;

    i WILL LOSE Weight Next Week[msnsmile2]


    those pancakes look yummy Julie i may even be tempted to whip up a batter[msnwink]after my long walk that is[msneek]

    Forgot to add on the positive side

    i have lost weight every week since joining class on Jan 2nd

    i have lost a total of 15lbs[clap][clap][clap]

    i have won slimmer of the week twice and slimmer of the month once

    i have a 1/2 stone and 1 stone award to remind me how far i've come and to motivate me further

    and on the negative i feel cheated side

    i stayed the same once[msnsad]

    so lots to celebrate really[msnsmile2] Mizzy

    I too stayed the same this week Mizzy, I really thought I would have had a loss as I was so ill at the end of last week I hardly ate.
