If you are flexible with dates and times , you should be fine booking when you get there. If you have a definite time and date you need for somewhere like Chef Mickeys etc then book now

Depends where you want to go.
Some of the Disney meals & shows tend to book up early so if there is a definite meal you want to go to then you are best calling in advance and reserving your table. ( Phone Disney on 001 407 939 3463 ).
Some of the more general character dining is available for booking whilst you are there - a couple of years ago we booked the character meal at the Garden Grill in Epcot on the same day that we went.

If you know where you want to go book now. Character dining in the parks seems to fill up fairly quickly.
