The hotel at Animal Kingdom has a very good brunch but more at breakfast time but they may do something special for Easter. You need to make a reservation. I can remember the name of the hotel, but the one but SeaWorld i believe is the best as they have everything and it is a Champagne brunch, very classy a little expensive but well worth it especially at Easter. Does anyone know the name of that hotel?

Isn't that now the Renaissance - the old Stouffers?
I don't know if the Gaylord Palms is doing anything, but they are highly recommended by people who have eaten there.

The Omni Rosen or the Omni Plaza also do a wonderful brunch. Not as expensive as The Renaissance or The Peabody as you don't have to have the champagne. It's about $11. The hotel in Celebration also does a nice breakfast without the scrum of the Ponderosa.
The boma Buffet at the AKL is excellent.
