Come on girls - that gives the rest of us something to aim at - lets all have a good loss to report this week.
I've been good over the weekend apart from 1 tiny piece of cheese, but I do mean tiny - just enough to get a taste.

I'll be off to Asda to stock up with the Innocent smoothies...............

Liesa - hope you enjoy the soup can you tell me how to make it please [?]

    Zero point Autumn Soup

    Ingredients

120 g pumpkin, peeled and seeds removed
    120 g carrot(s)
    120 celeriac
    1 medium onion(s)
1 stock cube, made up with 3/4 pint water
    1/2 teaspoon salt
    1/2 teaspoon pepper, black

    Instructions

Roughly chop the pumpkin, carrot, celeriac and onion.

Add the stock cube to the water to make a stock.

Place the vegetables in a saucepan, add the stock and a little salt and pepper. Bring the vegetable mixture to the boil, reduce the heat and cover the saucepan. Leave to simmer for 30-35 minutes.

Pour the vegetables and stock into a food processor or liquidiser then process for a few seconds to form a puree.

Pour the vegetable puree back into the saucepan. Cut the courgette into small cubes, add to the soup and bring to the boil. Boil for 2 minutes then pour into warm bowls and serve.

Julie go and get a blender they are really chaep and then you can make smoothies too

Zero point Chinese Shreaded Veg Soup

    Ingredients

2 stock cube, vegetable, or 1 rounded tbsp vegetable stock powder (e.g. Marigold)
1/2 teaspoon Chinese five spice powder
    2 tablespoon soy sauce, light
    2 tablespoon fresh coriander, chopped
2 portion No Point vegetables, fresh or frozen stir-fry, (2 generous handfuls)
    1 pinch salt
1 serving pepper, freshly ground black

    Instructions

Put the stock powder or stock cubes into a saucepan with 850ml (1 1/2 pints) hot water. Add the Chinese five-spice powder and bring up to the boil.

Add the soy sauce, coriander and vegetables. Simmer for 5 minutes.

Check the seasoning, adding salt and pepper to taste. Serve at once in warmed bowls. Serves 2 large portions or 4 small portions

Cook's tip: To transform the soup into a light supper, add 125g (4 1/2oz) flat rice noodles with the vegetables, remembering to add in the extra Points Values. You could add cooked prawns or chicken too!
