i go on the 4th of sep for 3 weeks, we are stopping in a villa in lake bearkley, i have booked a dolphin swim for me and my wife and my eldest daughter, there are 11 of us going, we are also driving to clearwater and staying in the hilton hotel on the beach for 2 nights,a full day at daytona and a trip to kennedy space,also a day at busch gardens, and a morning at horseworld. we have full 10 day world passes and also the flexi ticket for universal etc.we have two nights out booked (lua dinner show in seaworld & medievil times)have i missed anything

You will need more than 3 weeks to do everything there is to do. You shall just have to plan to come back time and time again, like the rest of us!

Nothing to do with what else you can do but you can get some money towards the shopping.
When you go to Discovery Cove for your dolphin swim make sure you take your Flex ticket with you and when you check in tell the reception you don't need the 7 day sea world ticket and you will get a credit back for each of the tickets. It was $30 but may be more now as that was last year. It's not generally advertised but all the guests we know who have asked have received the refund.
So you have another $90 to spend, if you ever get time to hit the shops.
