Large bowl of fruit for breakfast
Bacon, tomato,scrambled egg and toast, plus cherries for lunch
More cherries
Tuna steak, cauliflower, beans and potatoes plus raspberries, strawberries and loganberries.
Probably won't be on tomorrow as we are leaving at 9am and will have to walk the dog first. Dropping her off at MIL on the way to Brighton.

Theresa, I must ask you have you ever made lamintons? My mother was born and raised just outside Melbourne and these were one of my favourite cakes when I was a child. A definite no-no now though. I often wish I had the recipe though as I would like to make them sometime.

Lamingtons
Small squares of plain cake, dipped in melted chocolate and sugar and coated in desiccated coconut. Said to have been named after Baron Lamington (see below), a popular governor of Queensland from 1896 to 1901.
SPONGE CAKE
3 eggs
1/2 cup castor sugar
3/4 cup self-raising flour
1/4 cup cornflour
15g (1/2oz) butter
3 tablespoons hot water
Beat eggs until thick and creamy. Gradually add sugar. Continue beating until sugar completely dissolved.
Fold in sifted SR flour and cornflour, then combined water and butter.
Pour mixture into prepared lamington tins 18cm x 28cm (7in x 11in).
Bake in moderate oven approximately 30 mins.
Let cake stand in pan for 5 min before turning out onto wire rack.
CHOCOLATE ICING
3 cups desiccated coconut
500g (1lb) icing sugar
1/3 cup cocoa
15g (1/2oz) butter
1/2 cup milk
Sift icing sugar and cocoa into heatproof bowl.
Stir in butter and milk.
Stir over a pan of hot water until icing is smooth and glossy.
Trim brown top and sides from cake.
Cut into 16 even pieces.
Holding each piece on a fork, dip each cake into icing.
Hold over bowl a few minutes to drain off excess chocolate.
Toss in coconut or sprinkle to coat.
Place on oven tray to set.
(Cake is easier to handle if made the day before.
Sponge cake or butter cake may be used.
May be filled with jam and cream.)
BARON LAMINGTON
Rt Hon Charles Wallace Alexander Napier Cochrane Baillie, Baron Lamington, GCMG, Governor of Queensland from 9 April 1896 to 19 December 1901.
Whilst the origin of the name for the lamington cake cannot be accurately established, there are several theories. One of these theories is that it was originally the slang term for the homburg hat, worn by Baron Lamington, and these cakes were named for him.
Another theory is that they were named after Lady Lamington, the wife of the Governor.

it's lovely and sunny here up north but still a little bit sticky, i was planning to garden today, keeping myself busy to try and take my mind of the fact that Jo's not coming home tonight[msnsad] she was a little bit upset when she set off but i'm sure it'll get better for her once she gets to school and all the activity starts to excites the children that are going, she is going to phone me tonight so we can do "kiss, cuddle, hug, love" over the phone, which is her usual nighttime routine[msnsmile]

Good start to the day so far-actually haven't eaten anything yet so had better do that-but so far refused a scone from my friend.

Well, I did it, I lost 1lb this week (should've been more but too much bread on Saturday put pay to that) but, all the same, a 1lb is a 1lb and it means I've achieved my 2 stone loss![clap][clap][clap]
Getting nervous about the summer holidays though, I always find being at home to much harder to stick to a good plan. I've got lots of swimming and bike riding planned for the kids (and me!) but they don't know it yet!. I've also set myself a target to lose another stone before I come back to work at the beginning of September to try to keep myself on track (6 weeks hols and 2 weeks til hols begin) I don't think its too unrealistic.
Julie - I hope Lucy's hand is better now and that everyones poorly children are back to good health.
My ED has also gone away on residential this morning - to Weymouth - an adventure holiday place, I know she'll have a fab time but I do miss her already (she's 12). Still, she's only gone til Weds barely enough time for me to find the carpet in her room!!
