CHRISTMAS CAKE
SERVES 12, 9 SYNS ON GREEN AND RED This dark moist cake is made
INGREDIENTS without fat to reduce the syn count
113GR/4OZ NON/SOAK PRUNES STONED AND CHOPPED(8SYNS) per portion. it can be made a month in
283GR/10OZ MIXED DRIED FRUIT (40SYNS) advance and stored in a cool dry place
50ML/2FL OZ BRANDY OR RUM until you are ready to decorate it just
170GR/6OZ PLAIN FLOUR (30SYNS) before christmas
1 LEVEL TSP. BAKING PWDR(0.5SYNS)
57GR/2OZ GLACE CHERRIES(7SYNS)
57GR/2OZ MIXED PEEL CHOPPED(6SYNS) METHOD
1 LEVEL TSP GROUND CINNAMON Put the prunes and mixed fruit in a large
1 LEVEL TSP MIXED SPICE bowl and pour over the brandy or rum
PINCH SALT mix tog. and leave to soak for a few hrs
57GR/2OZ DARK MUSCOVADO SUGAR or overnight
2 EGGS BEATEN GRATED ZEST OF 1 ORANGE heat oven to 170/325 gas 3
GRATED ZEST AND JUICE OF 1 LEMON sift flour and baking pwdr into mix bowl
and stir in cherries and mix peel. add the
spices and saltand stir well so everthing
is coated in flour
stir in sugar and beat in egg with wooden
spoon add the soaked fruit together with
the soaking liquid and the zest and juice
of the orange and lemon mix well tog.
if the mixture is too stiff thin it down
with a little more lemon juice
spoon mixture into a lined 18cm/7in square
cake tin and smooth top of the cake
bake in oven for approx 2 hrs
or until a skewer inserted into the centre
comes out clean. if the cake browns too
qiuckly cover it with greaseproof paper
while it cooks
let the cake cool in the tin then remove
and wrap in greaseprof paper and foil
store in a cool dry place and decorate
with glazed fruit and nut topping
ive made it a couple of times and if you eat it straight away it is a bit chewy it needs to stand wrapped for a few days and it tastes more moist. just shows we dont have to be deprived around christmas pat

i notice that it serves twelve so i should get a pretty good wedge out of that for 9 syns
sounds so nice maybe i will eat a piece a day over the twelve days and not share the cake at all[msnembarrased]
having a good day have already done two really good walks with Olly and maybe if i can drag him out i may get a third one in

1 slice of wholemeal toast with marmalade 1.5syns
museli yoghurt
banana and strawberries
strawberry mini yogurt bites 3.5syns
chicken in red wine with steamed veggies
still have one healthy b left so going to have sachet of oats so simple later, i feel in the mood for warmer comfort food and think bowl of porridge will fit the bill quite nicely

well have just got back and am disappointed I have put on 2lbs![msncry]
I think it was because having my dad here we ate more red days than green and I function better on green so will have to get back on track tomorrow and sort myself out.

Julie, i did't skip lunch as such, i visited my mum and had fruit and yogurt and by the time i walked the three miles home it was time for tea!
and for some reason i've not been as hungry[msneek]
i've got a confession to make, you know i bought a sassy red bustier style dress for new year from monsoon, well, suddenly, it's too big around the boobies[msnembarrased] now do i tell dh or should i wait until the very last minute then nip to the alterations place and have them take it in?
i was going to take it back and swap it for a size downover but they are all sold out[msnsad]

Bad luck Jan, but you are doing so well I am sure you will lose it v quickly - have a good day tomorrow!
Mizzy - have you got them to try another branch? If you carry on losing weight you could be be down a smaller size. If there are no more to be had, then I suggest you have a discussion with an alternations place now to find out how logn they need, and then work out how long you can leave it before you take it to be changed.
I am sure you will look fabulous, and we want a picture!

Janny sorry about the gain but as Mizzy says dont despair we have all been there, I find the same thing if I have too many red days, but once you go back to your normal routine I am sure those 2lbs will disappear[msnsmile2]
Mizzy great news about your red dress[clap] I would try to find out if they could get a size smaller if not get it altered at the last minute if they can do it in time, like Fiona says we want a picture[msnwink]

Hi girls-I'm back-got back Saturday and it's ben awful.
Had two severe sickness does-realised too late it was the antibiotics I was taking for a bad bite I got in Florida.
They are called co-amoxiclav and they produced really severe vomiting and I mean severe.
Also lost all power to my sockets so no phone, computer, tv or anything for over 24 hours[msncry]
Wanted to get straight to SW but the best class for me has steps and the wheelchair lift is broken down[msncry]
So going to try to go it alone-just feel like my head is not in right place.
Hopefully getting back in here might help. Although it was not as hot Sept/Oct as May/june in Florida it was still hot and I still felt uncomfortablewith extra weight I am carrying. Loads of stress in my life -so really need to keep focussed. I can feel my resolve fading as I type.
Must must do it though-want to be 2 stone lighter for next trip
