Well, yes, Graeme on a launch day if there's one when you're going! You can check whether there is one during your stay at http://www.ksc.nasa.gov/ and all about launch tickets at http://www-pao.ksc.nasa.gov/kscpao/carpass/carpass.htm You have to book some time in advance as they're very popular.
If there is a launch whilst you're visiting and you can't get tickets for it, don't despair as you can see a launch long distance from most of central Florida.
Apart from that, there's no particular 'good' day although, as with lots of attractions in Florida, it's usually wise to avoid the weekends. Don't, whatever you do, miss the IMAX film called 'The Dream is Alive' which is one of the most awesome films I've ever seen and shows shots of astronauts in space and some amazing pictures of earth.
