Our ESTA's expire a week before our next date of travel.
Do we have to wait for them to expire before renewing them or can we do it earlier ie just extend the ones we have with updated details?

You can do it any time but consider whether the key information is likely to change before you travel or you'll have to do it all over again. Most of the information isn't mandatory anyway but the one that's most likely to change is where any of the passports have been renewed since the last authorisation.
By the way, if you're considering a gender change in the meantime, I'd hang on (pun intended)!!

No problem in doing them again my parents couldn't remember that theirs had been done and was still valid (they didn't run out until Nov (10), they re applied and got accepted.
You can update ESTA at any time, if the data that is allowed to be changed needs updating (address is US, etc). You can apply for a new ESTA at any time if you make a mistake. You must apply for a new ESTA if the existing one expires or any of the details that are fixed needs updating (eg passport details, name, etc).
There seems to be no limit of the number of applications you can do, and each one seems to simply overwrite the previous one. I'm guessing it's simply indexed on passport/name. Even the ESTA FAQ simply tells you to apply again if you make a mistake.
If I were you I would just apply now and get it out of the way. if you know the new address you're going to be staying at then put it in. If you don't. you can do it later (or not..as KG says, that's not mandatory anyway).
