Hi I have just done the esta online but 3 of the 5 I have entered middle names by mistake what should I do ?

I agree with Shirley...just do them again to be on the safe side. You'll get a new authorisation, that should override the previous ones.
The names must match those on the passport, just like the names on your ticket must match that on our passport.

Not true. As has been mentioned before, there is no space on the ESTA form to add middle name(s), whereas most people have their middle name(s) on their passport. For ESTA the only requirement for names is "Family Name" and "First (Given) Name".
I assume the OP means that they entered the middle name of a family member in the field marked "First (Given) Name" by mistake. In that case I would do as suggested, and simply re-register with ESTA.

And even assuming Martin did add first and middle name, this may well cause a problem with the new software set up for the airlines to check ESTA against the passport details added with APIS when he gets to the airport.
It is important JUST to enter first name
Just to clarify for the OP, this is from the CBP FAQ page:

The best way to correct that type of error is to re-apply. You should be able to make a new application if your previous application was approved. Even if your previous application was approved, the system will not let you reapply until you close your browser after the first try. If for some reason, you are unable to reapply - even after closing and re-opening your browser, click on the "Ask a Question" tab at the top of this page, and in the question box, give us the original application number, if you have it; the full name; passport number; date of birth of the applicant; contact phone number (including country code), as well as a description of what was entered incorrectly.
