6 adult and a baby

There are plenty of minivans that will cope with the 7 people. Few that will cope with them and all their luggage.

Have you considered 2 vehicles?

only me that will be driving the other dont like to!

I would go for a 7 seater minivan - the only time you might struggle for space is going to and from the airport, but it's amazing how much you can fit in the boot of the minivans and you can always put smaller items of luggage inbetween the seats.
