can anyone help me with this

as some may know i'm a regular on the slimming topic

whilst watching you are what you eat a few days ago gillian mckeith made a sweet potato pizza base in order to make a healthy veggie pizza

i have searched on google but to no avail, i know the basic ingredients are mashed sweet potatoes and wholemeal flour

does anyone out there have a "you are what you eat" recipe book or can you give some tips on making this

i might have to ask my super chef brother in law if he can come up with the basics for me to test

i predict a few bodged pizzas a happening[msnembarrased]

Mizzy found this you could swop the ordinary pots for sweet ones


Potato pizza - take mashed potato mix with about a third of plain flour, a pinch of bicarb mix into a dough, press into a flatish dish and cover with topping made of sweated onions and garlic. Add chopped - diced mixed peppers, a tablespoon of tomato puree ,a tin of tomatoes cook slowly until thick, add herbs of your choice, spread over base top with cheese and bake.

i found something similar to that one too Janny but not sure how would you work out what is a third

would you go on weight? - 2/3rds potato to 1/3rd flour

if i can get away with as little flour as possible it would make for a very easily adaptable SW recipe[msnwink]

one way or another i'm going to attempt it because it looked yummy on the tv

that got me stumped too but I came to the same conclusion as you -do it on weight.you culd experiment with smaller ratios to start with and see how it goes maybe

i'm going to go with a max of 56gms of wholemeal flour Janny that would work out at 9syns so if i decide to eat the whole pizza then i'll still be ok[msnwink]

may even add just 28gms at first and see how that looks, imagine a whole pizza for 4.5syns[msneek]

will try it later tonight and let you know how it goes

well Jackie, i did it and it was absolutely gorgeous

here's how i made it

Sweet potato pizza base 4.5syns on green (makes about 10inch round pizza)

1 large sweet potato
1 large Jacket sized potato
Peel cube boil until soft and then mash together

In a mixing bowl combine the potato mash with 1/4tsp bicarb of soda and 28gm wholemeal flour to make dough

Using palm of your hand flatten dough out thinly on a baking tray sprayed with a little fry light

Bake for 10-12 mins until base starts to get crispy, you need to watch your oven so as not to burn the base and i would say keep the base quite thin as it crisps up better

Remove from oven add choice of toppings then bake for a further 10 mins (again keep an eye on it)

Toppings

Tomato puree
Diced tomatoes
Finely sliced garlic
Sliced peppers
Red onion
Mushroom
Diced chilli
42gm reduced fat cheddar* healthy extra A choice*

You could also add some quorn, herbs, spices and a choice of any other free vegetables on green

my dough wasn't quite thin enough so it was a little soft in the middle but it still tasted really nice

my daughter enjoyed decorating hers with the vegetable toppings and wants another one tommorrow[msnwink]

sounds great Mizzy I will try this with my little ones as they love making home made pizza[msnsmile2] Their favourite topping is tuna, sweetcorn and mozzarella[msnwink]

Thanks for that Mizzy, it sounds lovley. Will give it a go. I wonder if it would work if you just used sweet potatoe?

Jackie i would have used just sweet potato but dh only bought one huge sweet potato so had to resort to adding white potato too as i was making two pizzas, i'm sure it'll work out just the same if not better

Just done this using a veg called an eddoe which is a substitute for sweet potatoes .As its still in the oven I'll let you know what its like.

the only amendment i would make is to cook the base on it's own a little longer until the middle starts to crisp and frylight those edges

Looks lovely Mizzy. Here is the reply from the McKeith research team-

The base is just made from wholemeal flour mixed with cooked and mashed sweet potato with olive oil. The tomato topping is made by sautéing onions in olive oil until soft. Then add tomatoes and basil, cook til soft and puree. Then you can add any chopped vegetables you like as toppings. Bake in the oven for 20-25 minutes.
